I love carrot juice and I love ice cream! I cannot see how this could possibly taste bad....:D (actually I probably would love it, I like a lot of odd combination ice creams. Hell, I've even eaten soy sauce flavoured ice cream and liked it)

Seriously, I went to a fancy-schmancy ice cream place and wasabi was one of the flavours. I didn't have the guts to try it. I went for their chocolate-raspberry-truffle ice cream instead. It was awesome.

My favorite is raspberry sorbet.
incredibly intense flavor!
And if you have access to liquid nitrogen, you gotta try it!

green tea ice cream is nice and lately I tried cinammon. Awesome, and I don't even care much for ice cream as a rule. I can see how carrot might be ok too. I think I like the more subtle flavored ice cream when I indulge.

My first reaction was 'blech' but I remember that I had the same reaction to the idea of carrot cake and I loved it when I tasted it. I've had deep fried green tea ice cream at a Japanese restaurant that was surprisingly good, and garlic ice cream at the Gilroy Garlic Festival that was so bad that I couldn't even swallow it and I love garlic.

Um, no. It means that instead of being mixed evenly through the ice-cream, the flavouring forms a squirly, random layer very roughly stirred through.
Just cook apricots into a sticky puree with a little chopped habanero and sugar, and toss roughly through vanilla ice-cream.

Can alcohol be added to an ice cream recipe? I'm imagining some really cool experiments if I ever get an ice cream maker for my long-gone birthday.

A local place does some odd flavors every year on April Fools' Day. I think they then even give out free samples. Last year was onion, IIRC. Other flavors have included ketchup, horseradish, and haddock.

Corned beef and cabbage was a favorite...
d3--- you can add a very little bit. It will slow down the freezing. If you are going to use fruit, you can soak the fruit in it first (think 'rum raisin') or you can swirl a bit through... or buy a flavor meant for it... or pour it on afterwards...

Probably not a whole lot because the ethanol lowers the melting point of the water. In other words, you'll have to cool the ice cream down further to get it to freeze. A richer fat content or more fiber (from fruit) might help it.
It'll be best to just pour the alcohol over the ice cream when it is served.
I once tried to make a sorbet with a sweet dessert wine. It was a total disaster, partly because of the alcohol and in part because there were no other solids around such as fat or fiber, to produce a smooth texture.
But one of the best sorbets I ever had was an apple sorbet served with calvados.

This sounds awful, but it was delightful.
Chuck and I were dining at a rather swanky place and were drinking a nice Cabernet. For dessert, we had a small scoop of really good vanilla ice cream. I, being slightly tipsy, decided to pour a bit of my wine on the icecream and it was fantastic! You could really taste the berry and chocolate and other flavors in the wine. Sounds wierd, but it was really good and we have done it many times since.

lmfao yeah cos the Irish know fuck all about beer,..... oh wait, you were serious. :)
N American microbrews might make the odd decent stout (Victory brewery in Philli , and ST Ambroise Oatmeal stout being decent examples i tried fairly recently) , but dont knock the Guinness mate, finest beer in the world and stout is pretty much all i ever drink. Might be mass produced but there arent many beers you can find that retain their quality over even 100miles let alone round the world (i had a very decent pint of Guinness in Penang )

Anyway something I've always wanted to try for fun is a method I saw in a Scientific American years ago: making instant ice cream with liquid nitrogen. The rapid chilling gives a very small crystal size which results in nice, smooth texture. Also it looks shit hot fun coz fog n stuff goes all over the place. :D

It's really good. I had it as hot chocolate first - the first few sips tasted like soap, but it grew on me fast. Then when spring/summer came, the shop got rid of the hot chocolate and had it as gelato instead. It's delicious.

I'd love to play with liquid nitrogen icecream but have no idea where I might get the nitrogen.
I've made quite a lot of sorbets, quince was one of the best. Not too many weird mixes yet, and we are heading into winter now so maybe not too soon.
I have had some interesting flavours in the last few months - rose & watermelon sorbet was excellent; guinness icecream OK; pineapple & anise sorbet is good. Baileys and date icecream was damn fine.

They sound good except for the Guinness one. Pineapples are in season and cheap over here at the moment. Hmmmmmmm.
Not sure what the story is where you are but when I was living in Auckland NZ about ten years back I rang some suppliers of industrial gases and apparently CIG had a truck that drove around Auckland dropping stuff off. If you had a thermos or whatever they'd sell you some liquid nitrogen more or less like beer on tap. Health and safety regs might be tighter these days but at the time it was going for around $10/litre.

The Guinness icecream was actually very good. It was not made by me but by a local icecreamery. They also did a Cooper's ale sorbet, which I didn't get round to trying beofre it sold out.
