so i was at my favorite mexican grocery chain, and noticed they had beef cheeks. i'd never made them so i whipped out a quick braise and had friends over...
it was pretty good. i KNOW there's a better way tho.
any good beef cheek ideas? beyond the normal mirepoix, stock, and red wine treatment??

never cooked them.
are they tough or tender?

they were really tender, and had an interesting texture and taste. i'd love to try them again!! did i mention they were cheap? the whole piece i roasted for 4 of us came in at around 2 bucks. total!! woooot!

I've heard braised + shredded beef cheeks reffed as a great homemade ravioli filling by both Anthony Bourdain and Mario Batali, if that helps. They know a bit about grub between them i reckon :)
Never used them myself though.
