I'm not going for low carb so much as choosing carbs that are actually worth eating.
There's no limit to what you can do with salads and greens. Stir-fry veggies with or without lean meat. Zucchini, yellow squash, snow peas, broccali, whatever combo you like. Spaghetti squash instead of pasta with marinara - yum! Or go garlic and pesto route instead.
I forget where you live (southwest?) but up here, its rhubarb season. I think the "blow out" factor will cancel the carb content. Just chop and boil, sweeten with asparatame if too tart.
Collard Greens - ok, this isn't the best example of low carb, because you HAVE to eat it with corn bread! Not that awful sweet-as-cake Better Crocker crap, but a the dense, gritty variety. Glory is a decent brand.
Get a big "mess" of greens, rinse them good, just chop or tear up and put in a big soup pot (5 quart minimum) with just a cup or so of water. They'll be heaped up to the top of the pan, but cook down fast. Once it gets boiling, cover and reduce heat. Throw in a ham bone if you have one. If you don't, fry 3-4 slices of bacon real crisp, then crumple them. Put 1-2 Tablespoons of vinegar in the bacon pan and boil with the grease for a minute, scraping the pan to get up any bacon remains. When the greens have cooked down and are tender, poor on the grease/vinegar, add the bacon and you're done! Serve with corn bread and black-eyed peas.
(The beans are good quality carb and high protein, so don't cut them out!)
