Pie is a religious experience. Apple pie is transcendant...when done right.

Right now, I'm experimenting.

I sent Swimmer to the market to pick up some pie apples. She found Northen Spy variety. They turned out to be quite good. So,when she went back, she bought a BOX. She also, at the same time, got talked into taking some apples she was told were 'good pie apples', Weggoners. She bought a BOX of those. I have lots of apples.

The Weggoners are nice and tart, but dry. They need to be combined with a sweeter, juicier apple, like a Braeburn, for pie.

Tonight, I wanted to trial another reputed pie-worthy apple I'd seen at the Berry Good fruit stand: JonaGold. Since I was there today buying 'dukfude' for the girls, I picked up four apples (those suckers are huge!) for a pie. Of course, when I make pie dough I have enough for four crusts...two pies. So, all work now done, I have a JonaGold pie and a Northern Spy pie cooling on the oven top right now.

Another half hour, and I'll be having warm apple pie.

Nom.

The JonaGold...well, it was fine pie and all, but it just didn't have that 'zip'. Northern Spy pie is top rate. That experiment has been repeated.

I mixed the Weggoners with a huge JonaGold and came out with a fine pie, too.

My boxes of apples have been adversely affected by the freeze. It's now above freezing and the apples will rot faster. This holiday weekend's priority is saving as many as possible by peeling, slicing and freezing them.

Apple. I reckon the apples I mentioned in the wild food thread that I found in the hedgerow are as good as any.

I'm wondering if that word 'pom' has anything to do with the Australian term for British immigrants to our lucky country?

It's a French word for apple. I'm not sure how Brits came to be poms.

The slaughtering has been going on all day on the alter stone. Each pom flayed, sliced and quartered.

We packed away three bags of pie guts in the freezer and baked up two new pies.

All Northern Spy....tasty stuff.
